This Cheesy Vegetable Wrap recipe is from the Meatless Mondays Web site!

In my opinion, wraps are the easiest recipes on the face of the planet. It’s a licence for creativity and an excellent way to manage leftovers!

These meatless wraps are excellent for lunch or as a light dinner that you can serve with a hearty salad!

> When buying your wrap, you’ll REALLY need to read the ingredient list because so many wraps contain added sugar and tons of stuff I cannot pronounce.

> The ideal scenario is for you to buy your wraps at a natural health food store or at Whole Foods Market. Those wraps contain a short list of ingredients and those are all ingredients you CAN actually pronounce.

> Wraps are a great opportunity to switch from white flour to whole wheat. You get far more fibre and nutritional value and in my opinion, they taste a whole lot better!

1/4 cup tub-style fat-free cream cheese (Krizia’s recommendation – I hate fat-free cheese. I’d get the regular cream cheese because it tastes better, but I’d make sure not to add too much of it)

4 (10-inch) fat-free flour tortillas (Krizia’s recommendation – I’d be concerned with the hidden sugar that is added in tortillas … I buy my tortillas at Whole Foods Market because I’m guaranteed that I’m not getting anything I don’t want in my food)

4 curly leaf lettuce leaves

1 cup alfalfa sprouts

1 cup shredded red cabbage

1/2 cup chopped tomato

1/4 cup crumbled blue cheese

2 tablespoons finely diced red onion

Spread one tablespoon cream cheese over each tortilla; top each with a lettuce leaf. Divide sprouts and remaining ingredients evenly among tortillas; roll up. Cut each rolled wrap in half diagonally.

Serves 4

Calories per serving: 183

Total Fat: 2.3 g

Protein: 7 g

Saturated fat: 1.4 g
