Recipes that celebrate the humble potato

Potatoes are responsible for keeping the Irish feed during the Great Famine. This period of great starvation, disease and mass emigration between 1845 and 1852 was a time that reduced the Irish population by 20 to 25 percent.

It’s been reported that as many as 1 million Irish men, women and children died during this period of great tragedy and another million emigrated and left their homeland.

Those who did survive attribute their survival to the humble, but feisty, potato!

Now, I’m not comparing our current severe recession to the Irish Famine of the 19th century, but I am saying that a lot more households are turning to the potato to help stretch their food budgets in these uncertain times.

Now, PLEASE don’t limit yourself to fries or boiled potatoes when it comes to potato recipes.

I do love my fries, but I would never want to eat them daily. As for the boiled potato, alas, my palette has never really taken a liking to them and therefore I rarely boil potatoes unless I’m getting ready to make mash potatoes.

I really enjoy surfing the pages of Eating Well and I was please to see their new segment on healthy potato recipes.

They have compiled a list of 10 potato recipes that are sure to help add a little sparkle to the kitchen table.

Here’s the yummy list of potato dish recipes:

  1. Braised Fennel with Tomatoes & Potatoes
  2. Honey-Mustard Turkey Cutlets & Potatoes
  3. Goat Cheese Mashed Potatoes
  4. Loaded Twice-Baked Potatoes
  5. Oven “Fries”
  6. Pea & New Potato Salad
  7. Salt & Vinegar Roasted Potatoes
  8. Spicy Potato & Kale Soup
  9. Spicy Stewed Potatoes & Spinach with Buttermilk
  10. Steak & Purple Potato Salad

I got a kick out of Oprah’s quote when it comes to describing how much she likes potatoes:

“My idea of heaven is a great big baked potato and someone to share it with” — Oprah

One last note, so many people think potatoes are evil because they are heavy on starch. Potatoes aren’t evil and you know my philosophy … if the French and the Italians eat them … so can I. What’s evil is eating huge amounts of fries or potatoes lathered in heavy cream or butter. Potatoes in moderation are delicious, inexpensive and easy to prepare.

    I just have to say that picture looks seriously edible and I’m not even a potato fan.

    Potatoes are one of the most common vegetables all over the world. They are cheap, easy to cook and have so many health benefits.
    You can bake them, boil them, microwave them… everyone can make something to eat with potatoes.I will start to grow tomatoes
    in my farm and now learning watever i can about them, thanks for information. I also found another good site
    about potatoes and so many other methods of agriculturing, i recommend you to take a look.
