Wild blueberry holiday dessert recipes

There are still so many days of baking left and that means so many more days to incorporate the antioxidant goodness of wild blueberries.

I think that clafouti might be my favourite blueberry dessert (a blueberry clafouti that is). That said, I’ve tasted some pretty delicious blueberry tarts that were to die for.

As North Americans we underestimate the availability of blueberries year round. Right now if you were to check my freezer, you’d see that I have 4 bags of frozen blueberries because I always stock up when they are on sale!

I hope these three desserts made with wild blueberries will get you into the kitchen whipping up some tasty desserts during the holidays!

Before I pass on these fantastic desserts to you, I just wanted to touch on desserts. If you are trying to lose weight and get healthier, the last thing you want to do is give up your favourite desserts. I think one of the biggest mistakes people make is to make radical lifestyle changes and then realize it’s far too difficult to keep up for a lifetime.

Having dessert once a week is a pleasurable experience and it’s really a treat. It’s when you start eating dessert twice daily or every day that it becomes cause for concern because desserts are made with sugar, white flour and other ingredients that are more about pleasure than health.

French blueberry pie recipe for the summer

french_blueberry_pie_recipe

I’ve loved blueberries my entire life. I’ve loved blueberry well before I even ever knew they were linked to antioxidants, superfoods, health and longevity of life.

I simply have loved blueberries from the time I was a small child because they taste amazingly delicious and when I was growing up you had to wait all year long for blueberry season (July-August) to be able to enjoy them (now of course you can buy flavour-less blueberries off season).

I usually eat my blueberries with plain organic yogurt and I’ll also add a handful of blueberries in my morning shake (aka my breakfast smoothie).

I also quite enjoy blueberries in my salads and blueberry muffins are the end of me (of course, we’re talking about healthy blueberry muffins bought at the natural health baker because regular muffins are filled with so many ingredients I just don’t want to put into my body).

French Madeleines cakes that made me cry

french_madeleines

I was checking out some of my favourite food sites when I noticed this recipe that surprised me so much that it made me weep with tears of joy.

I was so excited that I quickly emailed Mary, one of my editors, and she also was thrilled at the perspective of making this dessert.

Madeleines cakes are one of my favourite French desserts. In fact, it’s not a real dessert compared to some other more decadent French favourites, but it can be best described as a bite-size coffee cake that is much lighter than a pound cake (quatre-quart).

The twist with this recipe is that the creator boldly decide to replace regular flour with corn flour (well corn muffin mix in this case) and to top it off these Madeleines are stuffed with raspberry jam! You see, traditional Madeleines recipes are made with very finely ground nuts (usually almonds) as well as common cake ingredients such as flour, eggs, butter, sugar and vanilla.
