I’m known to have spent many hours in the kitchen sautéing onions. I sauté onions when I’m happy and I sauté them when I’m sad. The exercise is quite the therapeutic for me.

I usually have a batch of sautéed onions on hand to put in omelettes, rice dishes, pasta or to top of salads.

Recipes that celebrate the humble potato

Potatoes are responsible for keeping the Irish feed during the Great Famine. This period of great starvation, disease and mass emigration between 1845 and 1852 was a time that reduced the Irish population by 20 to 25 percent.

It’s been reported that as many as 1 million Irish men, women and children died during this period of great tragedy and another million emigrated and left their homeland.

Those who did survive attribute their survival to the humble, but feisty, potato!

Now, I’m not comparing our current severe recession to the Irish Famine of the 19th century, but I am saying that a lot more households are turning to the potato to help stretch their food budgets in these uncertain times.

Grow your own tomatoes

It’s finally spring and things are changing for the better! The days are longer/warmer and the markets are jam packed with fresh produce! Another great advantage to spring and especially summer is that we can finally eat tasty, juicy, ripe tomatoes!

I’m not really sure I’ve ever gone one week in my life without eating tomatoes. I really enjoy eating tomatoes, but usually swap to organic canned tomatoes during the winter months because I detest tasteless-odourless-winter tomatoes.
