This was such an incredible episode for a salad lover like me.

I love salads so much that I eat two salads every single day. If I’m travelling and go two days without eating a salad I usually feel like something is missing in my life.

The 9 remain participants had the trip and the meal of a lifetime when they were able to go to the White House and pick vegetable from First Lady Michelle Obama’s organic garden and work with the White House chefs to create the salad to end all salads.

They prepared a huge salad that could feed 50 people and not only was it organic, but it costs a measly $12!

As trainer Bob said:

“If this doesn’t show people that eating healthy is NOT expensive, I don’t know what!”

Hallelujah to that!

The Biggest Loser Season 8, episode 8: White House Salad

>>>Ingredients<<<

1 head of fresh lettuce, wash, dry and cut into bite size pieces

1 cucumber peeled, and cut into bite sized pieces

2 fresh in season tomatoes, wash and cut into bite size pieces

¼ red onion, peel and cut as thinly as possible

1 bunch fresh basil, wash and chop into big pieces

4 tbsp lemon juice

1/3 cup olive oil

1 tsp honey

Salt and pepper to taste

>>>PREPARATION<<<

Combine lettuce, cucumbers, tomatoes, and onions in large mixing bowl. In sealable container, combine oil, lemon juice, honey and salt and pepper. Cover container and shake vigorously. Add dressing to salad and serve immediately.
